I am always short of breakfast recipes-Sweet Fruity breakfast recipes,so while googling for such recipes that too eggless I found this one and modified it accordingly and also added a single leftover pear and craisins and raisins for some colour and it turned out much better than expected.It was fruity tasty and the recipe is very simple,so here it is.
Ingredients:
Dry Mix:
Whole Wheat Flour: 2 cups
Baking Soda: 1 tsp
Baking Powder:1tsp
Salt:1/2 tsp
Cinnamon: 1/2 tsp
Wet Ingredients:
Apple Sauce: 1/2 cup
Honey: 1/2 cup
Water: 1/2 - 1 cup
Other ingredients:
Pear: 1 peeled,cored and chopped into fine pieces
Raisins: handful
Craisins/Dried Cranberries: handful
Preparation:
In a big bowl,put all the dry ingredients and blend well.In another small bowl mix the wet ingredients with half cup water.Add the wet mix to the dry ingredients,adding more water if needed.I used only half cup of water though the recipe says 1 cup.Blend well until combined and then fold in the raisins,craisins and pears.Do not overmix the batter.Pour into greased muffin tin and baked n a preheated oven at 375 F for 25 - 30 minutes or until the toothpick/fork inserted comes out clean.Cool on a wire rack for few minutes.Serve as ahealthy breakfast muffin.Pears are rich in fibres and whole wheat is nutritious and a good source of calcium,iron,fibre and minerals.

You can use maple syrup instead of honey and canola oil instead of applesauce.The recipe had a baking time of 22-25 minutes,but mine took around 30 minutes.It was tasty,but sugarless-only fruits and raisins give sweetness-I used unsweetened apple sauce.So it is not sugarysweet,but fruity sweet.If you like you can add sugar,but this way it is healthy.
