Peas and Mushroom Fried Rice

This is a simple but tasty recipe which I tried and turned out tasty.Peas and mushrooms were in excess and so they entered the fried rice.Everyone has their own version of fried rice.Here's mine.

Ingredients:
Long Grain Rice: 1 cup
Capsicum:1
Spring Onions: 3
Peas: 1/2 cup
Mushrooms: 1/2 cup
Soy Sauce: 2 tbsp
Red Chilli Paste: 1 tbsp
Salt:as per taste


Preparation:
Clean and cook rice till done.Chop the capsicum into long thin strips.Also clean and chop the spring onions.Chop the mushroom in bite size pieces as well.For the red chilly paste, you can use store brought or make it by soaking 2-3 redchillies in warm water and grinding it after 10 minutes with very little water.I made mine own.Also I used little soysauce only as I did not want the rice to look too dark.

Heat oil in a wok/pan/kadai,add capsicum,saute the add the peas,mushroom, saute.Once the mushrooms start sweating add the spring onions,salt,red chilly paste and finally the rice.Saute till the rice absorbs all the flavours.Add the soy sauce and continue sauteeing for a few more minutes till done.Serve either with a raitha(Indo Chinese) or Chinese gravy.
