Indonesian Tofu & Vegetable Sate

Sate or Satay is a popular delicacy in Indonesia,Malyasia and means chunks or slices of meat in bamboo skewers and grilled or barbecued and served with spicy dips or seasonings.Here I tried to recreate a sate with tofu and vegetables like cauliflower and broccoli (Source:EatingWell Magazine).They tasted great and so here they are.


Ingredients:

Tofu: 10-12 cubes/pieces
Broccoli: 5-10 pieces
Cauliflower: 10-12 pieces

Kecap Manis Sauce:
Water: 4 tbsp
Soy sauce: 2 tbsp
Sugar: 2-3 tbsp
Garlic: 1 clove crushed
Star anise: 1 single pod

For Marinade:
Soy sauce: 2 tbsp
Vinegar: 1 tbsp
Garlic: 1clove
Oil: 1 tbsp
Cumin powder: 2 tsp +
Coriander powder: 2 tsp+
Salt: as per taste

Dipping sauce:
Peanut Butter: 1tbsp
Hot Sauce: 1 tsp+
Tomato Ketchup/Sauce: 1 tsp+

Preparation:
First prepare the Indonesian soy sauce or Kecap Manis.This is very easy.

Kecap Manis:
In a small sauce pan,mix water and sugar,stir to disslove the sugar and bring to boil.Once it starts boiling,do not stir and let it simmer for 5-10 minutes till it caramelizes or light brown colour is formed.Immediately remove and cool it by placing in an icebath.Once cooled mix it with soy sauce,crushed garlic and one single pod of star anise.Heat this mix again and simmer for 5-10 minutes till it thickens.Let it cool completely.Store this in a sterilized jar and let it mellow in the refrigerator overnight.Our sauce is ready.

Marinade:
For preparing the marinade,take the sauce above,mix it with soy sauce,vinegar,oil,cumin & coriander powders,little salt and crushed garlic.Mix well.Check for the desired spiciness.We should obtain a sweet & sour sauce,but can be modified as per choice and taste.A little extra spicy/salty is ok,as it is the marinade. Now the marinade is ready.Reserve a little or quarter of the marinade for making the dip.

Dip:
Take a quarter of the marinade and mix with peanut butter,hot sauce,little water and tomato ketchup/sauce.Our dip is ready.

Sate:

Put the tofu block on paper towels and pat dry and cut into desired cubes/shapes.Cube the broccoli and cauliflowers and steam them for 3-5 minutes till they are quarter cooked.Let them cool.

Put the tofu and cooled veg pieces into a resealable bag/ziploc bag.Pur the rest of the marinade and close the bag.Shake well so that the pieces are well coated.Refrigerate for 15 minutes minimum,but not more than 2 hours.Meanwhile soak the skewers(bamboo) into water for 15 minutes or more.

Take a skewer,and thread tofu and veggies in equal amounts and then place the skewer on a baking sheet.Do so till all the skewere and the veggies and tofu are over.Place the baking sheet under broiler(position rack in the upper third of the oven) for 6-8 minutes per side.

Serve as an appetizer with the dipping sauce.

The taste was great,but I had boiled the veggies,so some looked a bit wilted.Tofu came out perfectly broiled but some broke into pieces,maybe because I overlooked the marinating time.I used up the entire 1/4 cup and little more of sauce(Kecap Manis) I made.If any remainder is there it can be stored in the fridge.Also I messed up the dipping sauce a bit.I used the peanut butter directly from the fridge.So it was not mixed properly in the dip and some grains were there.So make sure the PB is at room temperature.You can go for other veggies including tomato and onion apart from what I have used.
